Soft & Chewy No Chill Sugar Cookies


Who doesn't love a chewy soft sugar cookie? These quick & delicious cookies aren't exclusive to the holidays only, these can be made all year round. Add some fun with sprinkles or food coloring to brighten your cookie dough. I have a new obsession with the color pink, so I added some hot pink nonpareils to the mix. (Kinda wishing I made the dough pink too)

Easy & Delicious Soft Sugar Cookies


Ingredients:

  • 1 cup butter softened (omit salt if using salted butter)

  • 1 cup granulated sugar

  • 1 large egg

  • 1 tbsp vanilla

  • 2 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/4 tsp salt




Instructions:

Preheat oven to 350 degrees

Prep time: 20 minutes

Bake time: 10-12 minutes

  1. In a large bowl, cream butter and sugar until light and fluffy (1 min)

  2. Add egg & mix until combined

  3. Next, add vanilla extract, baking soda, baking powder, and salt. Mix until just combined.

  4. Slowly add flour until fully combined. The dough should start to pull away from your bowl and form a ball.

  5. Add sprinkles with a mixer or kneed by hand

  6. Use a scoop or your hands to shape your cookies. Place cookies about 2'' apart on a lined baking sheet.

  7. Bake at 350 degrees for 10-12 minutes. Do not overbake if you want them chewy & soft!

  8. Remove from oven and cool.


Whenever I make a soft cookie recipe, I make a few extras for cookie sandwiches. You can fill your cookie sandwiches with a variety of fillings. This time I filled each cookie sandwich with vanilla buttercream and a kiss of dulce de leche in the center. Before closing each sandwich, I topped the filling with Fancy Sprinkles sanding sugar & dusted each cookie top with Bakell pink tinker dust.
